Wrap with CARROT and HUMUS.
(for 2 wraps, preparation: + - 15 min)
You need:
- 1 winter-carrot or parsley root
- 2 regular carrots
- 1 cup fresh cress
- Fresh thyme
- Fresh chives, finely chopped
- 2 tortillas
- 200 gr. humus (chickpea puree, bought or homemade)
- salt & pepper
Preparation:
Peel the winter-carrot (or parsley root) and the normal carrots and grate them in a bowl. Cut some cress and put it with the grated carrots. Season well with salt & pepper, thyme and chives. Warm the tortillas a bit in a pancake pan and coat them afterwards with some humus. Then put some of the root-cress-mix in the middle of the wrap and fold the top and bottom over the filling. Roll the wrap tightly. Yummy !!
TIP:
Do you like it more spicy ? Then put also what (smoked) paprika and finely chopped chilli in the humus for an extra spicy flavor. In one of my previous recipes you will find certainly a humus recipe, in case you want to make it yourselves.
You can always take a wrap with you, as your lunch at work or at school. That's different than a boring sandwich. It's guaranteed to a succes, it will taste fabuleus and there will be envious glances from your fellow students or colleagues. HAHA !!!
