CELERIAC soup with Veggie-Sausage Rolls.


CELERIAC soup with Veggie-Sausage Rolls.
(for 4 pers., preparation: + - 40 min)


You need:
- 1 celeriac, peeled and cut into small cubes
- 2 potatoes, peeled and cut into small cubes
- 2 onions, peeled and chopped
- 2 leek whites, washed and cut in rings
- 2 liters. broth
- 1 tsp. dried thyme
- 300 gr. veggie-mince
- 2 x 1 tsp. cumin seeds
- 1/2 tsp. paprikapowder
- 1 egg, beaten
- 1 egg yolk
- 2 x 1 cloves garlic, pressed separately
- 4 slices of puff pastry (if it's frozen puff pastry than first defrost it)
- 3 rusks, crumbled
- 2 tbsp. parsley, chopped
- 100 ml. cream
- butter or (olive)oil
- Salt & pepper
- baking paper













Preparation:
Heat some butter or oil in a pot and fry the vegetables. Deglaze with the broth and season with salt & pepper and thyme. Let the soup simmer for 20 min. Mix finely. Preheat the oven to 190 ° C. Mix the veggie-mince with 1 tsp. cumin, paprikapowder, 1 crushed garlic clove and the egg yolk. Knead 4 veggie-sausages. Put such a veggie-sausage on each sheet of puff pastry and fold the dough over it. Press the edges tightly with a fork. Brush the tops with beaten egg and sprinkle with the rest of the cumin. Bake in the oven, on a baking sheet, for 15 to 20 min. Mix the crushed biscuits with the parsley and the second pressed garlic clove. Bake the crumbs crispy (possibly along in the oven or in a pan) and let the crumble drain on kitchen paper. Heat the soup and add the cream. Do not bring to the boil ! Divide the soup into bowls and sprinkle with the crumble. Serve with a veggie-sausage sandwich.
