Falafel with grilled vegetables.
(for 4 pers., preparation: + - 1:10)
You need:
For the falafel:
- 2 cans chickpeas, drained
- 1 red onion
- 2 cloves garlic
- 1 Spanish pepper or chilli, deseeded
- A bunch of parsley
- A bunch of coriander
- A little water
- Pinch cayennepepper
- Groundnut oil
for the vegetables:
- Olive oil
- 2 sprigs rosemary
- 4 garlic cloves
- Salt & pepper
- 4 hands of vegetables like sweet potato, pumpkin, celeriac o.o. (diced)
- a baking dish
Preparation:
Preheat the oven to 180 ° C. Put all the vegetables in a baking dish with some olive oil, rosemary, garlic and salt & pepper. Let bake for 40 min at 180 ° C. Meanwhile, mix the drained chickpeas (with hand blender or food processor) together with the other ingredients to a paste. Make balls and fry in oil (at 180°C.) until golden brown. Serve warm along with the grilled vegetables.
