PUMPKIN-QUICHE with QUINOA.
(for 4-6 pers.)
You need:
- 1 roll of puff pastry (or homemade dough)
- 150 gr. quinoa
- 200 gr. pumpkin, finely grated
- 150 gr. smoked tofu, grated
- 3 eggs
- 250 ml. cream (maybe buy oats- or rice cream in the bio-shop)
- A handful of fresh herbs, finely chopped (eg: parsley, chervil)
- Dried herbs such as thyme and oregano
- 75 gr. goatcheese, diced
- Pepper & (sea) salt
- cake pan, buttered
Preparation:
Preheat the oven to 180 ° C. Cook the quinoa according to the directions on the package. Mix this then with the grated pumpkin and tofu. Beat the eggs in a bowl along with the cream. Add the finely chopped herbs. Cover the buttered pie dish with the pastry and divide the mixture of quinoa, squash and tofu on the bottom. Pour now the egg-cream mixture over that and divide the diced goat cheese on top. Bake for half an hour until the cake is colored golden brown.
