VEGGIE-BALLS with CAULIFLOWER curry and YOGHURTsauce with CORIANDER.

VEGGIE-BALLS with CAULIFLOWER curry and YOGHURTsauce with CORIANDER.

(for 4 pers., preparation: + - 50 min)


You need:
- 1 cauliflower, cut into florets
- 400 gr. ready-made veggie balls (or homemade with veggie-mince, baked)
- 2 onions, roughly chopped
- 2 cloves garlic, finely chopped
- 400 gr. canned tomatoes (and juice too !!), chopped
- 125 gr. stirred yoghurt
- 1 tsp. ginger, grated
- 1 tsp. curry powder
- A pinch chilli powder (+ - 1/4 tsp.)
- 1 tsp. ground coriander seeds
- 3 tbsp. fresh coriander, finely chopped (for the yoghurtsaus)
- 1 tbsp. fresh cilantro, coarsely chopped
- 1 tbsp. olive oil
- Salt & pepper
- frying pan with lid















Preparation:
Heat the olive oil in a frying pan. Fry the onions with the grated ginger, garlic, curry powder, chilli powder and coriander powder for 3 to 4 min. Add the chopped tomatoes and juice. Put the lid on the pan and let simmer for 10 min. Add the veggie-balls, the cauliflower florets and a little salt (to taste). Let stew for 20 min. Now add the tbsp. coarsely chopped coriander, stir well. Mix the yogurt with the 3 tbsp. finely chopped coriander and some salt & pepper in a bowl. Serve the curry veggie-balls with cauliflower in deep plates or bowls and serve the yogurt sauce with coriander, separately. Serve f.e. with rice.
