LENTILsoup with caramelized ONION.


LENTILsoup with caramelized ONION.
(for 4 pers., preparation: + - 50 min..)


You need:
- 4 onions, peeled and cut into thin wedges
- A bunch of coriander, washed and chopped
- 400 gr. lentils (may be canned lentils), rinsed and drained
- 1 tbsp. brown sugar
- 1 tbsp. balsamic vinegar
- 2 tsp. coriander powder
- 2 tsp. cumin powder
- +- 1 l. stock (depends of the thickness)
- butter or oil
- Salt & pepper




Preparation:
Put some oil or butter in a pan and fry the onion until soft. Stir in the sugar and vinegar. Let it gently caramelize for 15 to 20 min., do not forget to stir regularly. Sprinkle the cumin and coriander powder to the onions and let it stew for + - 1 min., until the aroma is released. Add the stock and lentils. Bring to the boil and let simmer for + - 5 min. Garnish with coriander.
