Cream of LETTUCE and SORREL.


Cream of LETTUCE and SORREL.
(for 4 pers., preparation: + - 45 min.)


You need:
- The large green leaves of two heads of lettuce.
- 1 bunch of sorrel
- 1 tbsp. olive oil
- 1 potato
- Salt & pepper
- 1 l. boiling water
- a mixer


Sorrel




Preparation: 
Wash the lettuce and sorrel and chop the leaves finely. Keep 4 tbsp. aside for garnish. Put the olive oil in a pot and add the rest of the lettuce and sorrel. Peel and wash the potatoes and cut into small cubes, add to the vegetables and pour in the 1 l. of boiling water. Let simmer for 30 min. over low heat, without lid. Season with salt & pepper. When the vegetables and potato are tender you can mix it. You can serve this dish hot or icecold  (is good on a very hot day !)
