CHICKPEAS-veggieburger with GORGONZOLA-POTATOES.


CHICKPEAS-veggieburger with GORGONZOLA-POTATOES.
(for 4 pers., preparation: + - 1h.)


You need:
- 4 (brown) breadrolls, cut in half, (in the middle of course)
- 1 can chickpeas (400 g.), drained (or fresh)
- 1 tin (150 g.) corn kernels, drained (or fresh)
- 1/2 paprika, chopped
- 100 gr. (bijv. dandelion) salad
- 1 spring onion, chopped
- 2 red onions, sliced
- 100 gr. bread-crumbs
- olive oil
- 1 tsp. curry powder
- Cayenne
- Salt & pepper
for garnish: gorgonzola-potatoes:
- 4 sweet potatoes
- 120 gr. gorgonzola






 
 
 
 
 
 
 
 
Preparation:
To start with, a TIP:
You best can make the veggieburgers in advance !!!!

Preheat the oven to 200 ° C. Wrap the potatoes in aluminum foil. Put them in the oven and let cook for 50 min. Chop the chickpeas and corn coarse (you can use a blender). Mix with 4 tbsp. breadcrumbs, spring onions, paprika, curry powder, cayenne and salt & pepper. Let rest 10 min. Shape 4 burgers with the mixture. Roll them in the rest of the breadcrumbs and let them rest for half an hour in the refrigerator. (now you know why to make them in advance ;-)). Remove the potatoes from the oven and open the foil. Now cut the potatoes open (eg crosswise) and divide the gorgonzola on them. Put back in the oven for another 10 min., with the foil open. Bake until goldenbrown. Fry the onionsrings gently in oil. Cover the openrolls with lettuce, a burgers and fried onion. Serve the gorgonzola-potatoes. And don't forget some sauces !! (see that next time, my sweetypies.)
