A rather unknown vegetable: Burdock root in the oven.

Burdock root in the oven.


You need:
- 2 burdock roots
- 50 gr. butter
- 50 gr. flower
- 500 ml. milk
- 200 gr. hard cheese (eg Comte), grounded
- juice of 1 lemon
- nutmeg
- salt & pepper
- a cooking pot
- a saucepan
- a wooden spatula
- an oven dish
- a vegetables peeler
- a collander
- oven gloves






Preparation: 
Peel the burdock root, cut into pieces of 3 cm. Put water in the pot, pour in the lemon juice and throw the pieces burdock in. Bring to the boil and simmer for + - 15 min., till done. Let then drain in the collander. Make the béchamel sauce: melt the butter in the saucepan and add, stirring with a wooden spatula, the flour. Stir until smooth. Then add, again while stirring, the milk, little by little. Let it boil, add the grated cheese and season to taste. Put the pieces burdock root in the oven dish and cover with the bechamel sauce. Place under the grill. Be careful cause it's very hot !! In this way prepared it looks like salsify. Serve with boiled potatoes and an omelet or other meat substitute.
